Hope Wine Reduction Sauce
Onion (1, chopped)
Celery (1 stalk, chopped)
Carrot (1, chopped)
Leek (1, chopped)
Roma Tomato (1, diced)
Garlic Cloves (2)
Beef Stock (4 cups)
Hope Rhône Blend (2 cups)
Salt & Pepper
For the Sauce...
Sauté the onion, celery, carrot, leek, and Roma tomatoes in olive oil over medium heat in a saucepan.
Add the garlic cloves, crushed.
Continue to sauté for a few more minutes.
Deglaze the saucepan with the Hope wine, until it's reduced to one cup.
Add the beef stock and the bouquet garni.
Slowly reduce the liquid by half, skimming constantly.
Strain the sauce and add salt & pepper.
Makes 1 cup, serve with hearty meat dishes and pair with our Hope Rhône Blend!
