November Wine and Food Pairing Suggestions from Carolyn’s Kitchen
As many of you know, I love to cook and have a passion for finding great food pairing combinations with our wines. Each month I’ll share with you some of my favorites. I encourage you to try them, adapt them or send me your own great ideas.
One of my favorite fall vegetables is butternut squash, John grows them here on the vineyard for me. So I was excited to learn that it’s a great pairing with Chardonnay. Just last week Chef Charles Lewis served Fresh Salmon on a bed of Butternut Squash Risotto at our Farm to Table Dinner – it was an amazing pairing with Inspiration. I’ve also served Inspiration with a Curry Butternut Squash soup and a Butternut Squash salad. Both the soup and the salad start with roasting the squash, I find the slight sweetness that comes from roasting the vegetable really brings out the fruit in the wine.
A question I’ve been getting a lot these last few weeks – What wines to serve on Thanksgiving? Again, Inspiration is always a good choice with turkey, but the staff
favorite is our Family Album Carignane. The wine has earthy tones, with cranberry and cherry on the palette and a baking spice finish. These rich characteristics developed in the 120 year vines are really enhanced by the favorite side dishes of stuffing and cranberry sauce. It’s become a regular on our Thanksgiving table.
