With the release of our Flagship wine, Blessings Petite Sirah, exclusively to our wine club this month, it seems natural to introduce my favorite parings with Petite Sirah. Petite Sirah generally has high tannins, therefore you want to pair it with richer more fatty foods to create a balance. The 2012 Blessings is dominated by red fruit notes – red currant and raspberry – with blueberry in the background. It will stand up nicely to bold herbs and spices, nothing to sweet. A barbequed steak, ribs of all kinds, pulled pork, and Amy’s brownies are all great pairings with Blessings.
One of the first things I paired with Blessings back with the 2006 vintage, and still one of my favorite pairings today, is Organic Beef and Blue Cheese Sliders. Kobe Beef makes wonderful sliders, but I like Costco’s Organic Ground Beef with 15% fat. I make the patties 1 1/2 to 2 ounces, add salt and pepper and shape slightly larger than the bun (about 1/2 inch thick). Make a slight indentation in the patty with your thumb. Grill or fry the patties in a skillet for approximately 1 1/2 – 2 minutes per side for medium. Build your slider, bottom bun, patty, crumbled blue cheese, a slice of crispy bacon if you’d like, and heat under the broiler until the blue cheese melts. Top with bun and serve immediately.
